I want to produce and market materials and cooking demonstrations that will assist those who have been prescribed therapeutic diets.  Insurance will not cover adequate consultation with a Registered Dietitian for patients to learn how to plan menus, then select and prepare foods to manage their diets.  These materials and videos would lead clients through their first month on a new diet prescription, providing them with the tools they need to manage their diets long term.  My intention is to provide really good recipes and teach basic cooking techniques that will spark clients' creativity and provide them with the understanding, confidence and motivation to customize their diets to their own tastes while supporting their health. This product is extremely relevant to our post-Covid-19 world for several reasons.  First, face-to-face diet consultations and even group instruction are less feasible than before.  Second, more people are cooking and eating at home, but many lack basic cooking skills to cook with the fresh, whole foods they need to be healthy.  To connect with me, please email jackie.walters@uky.edu
